Mexican Chilli Beans (Vegan/Vegetarian)

2 medium onions, chopped
3 garlic cloves, peeled and finely chopped
2 green chillies finely sliced
1/2 Lime or lemon juice
- Dried Spices
1/2 tsp hot chilli powder
3 tsp cumin powder
2 tsp coriander powder
1 tsp paprika
1 tsp brown sugar (or caster sugar)
1 tbsp plain flour
1 tsp annatto ground (optional)
- Dried Herbs
1 tsp dried oregano
1 tsp dried thyme (only if not adding fresh)
1 bay leaf
- Main
400g can of chopped tomatoes
2 tbsp tomato puree
400g turtle beans, drained and rinsed
400g red kidney beans, drained and rinsed
150ml balsamic vinegar
1 tbsp cooking oil (coconut if available)
- Seasoning
salt, ground pepper
Directions
- Place a large pan over medium heat, when hot, all oil, onions and sauté till light brown, avoid sticking or over cooking.
- Add chopped garlic and stir for 2 - 3 minutes, then add chopped chillies.
- Add Chopped tomatoes, vinegar, bay leaf, cumin powder, coriander powder, chilli powder, paprika powder, sugar, annatto powder (optional), oregano and thyme, cup of water and let it simmer for 5 minutes.
- Add in vinegar, tomato puree and simmer for another 5 minutes.
- Add sprig of thyme optionally, both the drained and rinsed beans cans into the pan and cook for 10 minutes on medium heat, add in the plain flour dissolved in 1/4 cup of water slowly and observe required consistency.
- Add salt, ground pepper and lime or lemon juice.
- Finally garnish it with some freshly chopped coriander or parsley, red chillies, tomatoes and squeeze in some lemon juice dressing.
- Enjoy with boiled rice as a meal or serve with vegan tortilla chips as sharing snack.
